The Santoku from the Epicure Collection has a thinner blade than the Chef's knife with a cutting edge of 10º. It gradually curves up at the end making a straighter edge. The hollow edge creates small air pockets between the blade and the food to reduce friction and drag and gently push food from the blade. Prep a variety of fresh produce, including starchy vegetables which tend to stick to the knife's blade.
