The Hollow Edge Nakiri joins the Classic IKON collection of knives from Wusthof, bringing a thinner, Asian-style blade with a 10° cutting edge. The hollow edge creates small air pockets between the blade and the food with its evenly spaced vertical indentations. This reduces drag and friction, allowing the cook to easily prepare a wide array of produce, even those starchy vegetables, like potatoes, that tend to stick to the blade of your knife. This knife was selected as a Housewares Design Awards Finalist for 2017!

  • Precision-forged from a single blank of high carbon stainless steel
  • Full tang that is triple riveted to the handle for precise control
  • Precision Edge Technology (PEtec) yields a blade that is 20% sharper with twice the edge retention.
  • Tempered to 58º Rockwell
  • The half bolster allows for the knife to be honed and sharpened the entire length of the blade and the heel bolster provides added balance
  • Contoured handle for comfortable fit and a more contemporary appearance
  • Washing your knives by hand is recommended; then immediately drying them. Do not let your knives soak in water.
  • Avoid cleaners containing bleach or citrus extracts. They may stain the surface of your knives.
  • Always use a wooden cutting board to preserve blade sharpness. Cutting on hard surfaces such as stone, metal or glass quickly dulls blades.
  • To maintain a sharper cutting edge, use a sharpening steel, preferably each time after you've used a knife.
  • It's best to store your Wusthof knife so its edge and your fingers are protected, preferably in a block or in-drawer knife tray.
  • We suggest using a meat cleaver when you need to cut through bone, otherwise you can damage your knife blade.
  • Lifetime Wusthof guarantee against material and manufacturing defects, with normal use and proper care.
  • Made in Germany
