Utility knives fall somewhere between a chef’s knife and a paring knife in both size and use. These knives are ideal for any jobs that require a decent bit of precision but are too big for a paring knife.
Until now, creating a layered Damascus from two premium-quality stainless steels was considered impossible, but now, Shun is proud to present their Dual Core series. Each knife in this series features seventy-one alternating micro layers of high carbon, high chromium VG10 and VG2 stainless steels. The two types of steel are roll forged to produce a finer grain in the steel and to give it both strength and beauty. The steel is then hot forged in order to give it the herringbone texture that allows the layers to alternate along the cutting surface. The two steels used in these blades wear at different rates during normal use, because of this, the blade will gain a micro serration over time allowing these extremely sharp blades to feel sharper longer. The blade’s etched laminations help to reduce drag and to release food so the knife glides through whatever you are cutting with ease. These blades are incredibly light, strong, and thin.
