This 6" Shun Premier Chef's Knife, with PakkaWood handle is a medium length, all purpose knife which is ideal for cutting and chopping.
Shun Premier Knives have the grace and beauty of traditional hand-forged knives. Every blade has a core of VG10 steel VG-10 Super Steel (containing carbon, chromium, cobalt, magnesium, molybdenum,silicon and vanadium), clad with 16 layers SUS410/SUS431 stainless steel for a damascus appearance. Where the steels meet, a wavy line called a hamon is formed - similar to the line formed when samurai swords are tempered using a clay baking technique.
Each knife has a 16-degree convex ground blade which is beveled for lateral stability and precision. The striking hammered finish (Tsuchime) acts as a series of hollow-ground cavities, reducing drag and quickly releasing food from the blade.
The oblong, walnut Pakkawood handle fits comfortably in your hand and the Shun logo embossed on the bottom adds balance and beauty to the knife, both in your hand and in a knife block.
