This Miyabi 7000MC Santoku is a Japanese style chef's knife in the Miyabi 7000MC series has a MicroCarbide core wrapped in stainless steel giving you an amazingly sharp edge on an easy to maintain blade.
Traditionally Japanese knives achieved their sharpness from the use of high carbon steel which could be made very sharp - but needed polishing and oiling frequently to prevent rust and corrosion. The secret behind the amazing performance of Miyabi 7000MC series knives is a MicroCarbide center. If you were to look at MicroCarbide steel (MC66) under a microscope, you would see a uniform structure that is harder and capable of holding a finer edge longer than traditional steel compounds.
Miyabi 7000MC knives are contructed with a MicroCarbide core (approximately 66º Rockwell), wrapped in layers of stainless steel. This 3 layered construction provides the optimal balance of strength with corrosion and breakage resistance. With MC66 at its core, the blade starts very sharp, has long-lasting edge retention and is easy to maintain.
The traditional "D shaped" handle is the key to effortless finger-tip control. Elegantly styled from stainless steel and Micarta (a multi-layered synthetic compound of linen and synthetic resins), Miyabi knives have perfect weight and balance.
