The 12" Shun Classic hollow ground slicing knife with PakkaWood handle is an excellent slicing knife which can be used for slicing a variety of foods. It is particularly well suited for slicing smoked salmon or ham. Its hollow edge reduces the surface tension between theblade and the food to be cut, which makes it easier to slice food withoutit sticking to the blade.

Shun Classic knives have blades made of 16 layers of steel on each side, with a VG-10 Super Steel (containing carbon, chromium, cobalt, magnesium, molybdenum,silicon and vanadium) core, which results in a 33 layer, rust free Damascus look blade, which has the advantages of Damascus steel (reduced sticking of food which leads to less food damage and easier food prep) but without any of the rusting problems associated with Damascus steel.
Their D shaped handles are made of PakkaWood which is an ebony black composite material made of fused hardwood and resin. It is durable, beautiful and allows for a secure grip. It is dishwasher safe (though dishwashing is not recommended for Shun knives).
