This Miyabi 7000 Pro Yanagiba is a long, thin, Japanese style, single bevel, slicing knife in the Miyabi 7000 Pro series. This series has heavy, asymetrical blades that are ideal for classic Japanese cuisine.  It is mainly for skinning fish and preparing sashimi.
 
Miyabi 7000 Pro series knives have asymmetric blades, which have always played a very special part in preparing Japanese dishes.  They combine the visual grace of the Japanese art of cooking with exceptional craftmanship and performance.  They have dazzlingly sharp, asymmetric blades that deliver a precise cut that will impress even the most demanding chef.  This blade design allows for cutting techniques that are indispensible to Japanese cuisine.  A knife with an asymmetric blade is distinguished by the "Shinogi-suji" line that tapers off towards the cutting edge.  This tapering enables the extreme sharp blade profile that alllows for the precise, fine and smooth cut.
 
7000 Pro blade are slightly heavier than their symmetrical counterparts to ensure that they are tough enough for some of the rougher preparation tasks.  Produced in solid MCV60 steel, the long leading edge of the single bevel,  enhanced by the slightly concave back is a design that makes intricate cutting tasks easier to perform. 
 
The traditional "D shaped" handle is the key to effortless finger-tip control.  Elegantly styled from stainless steel and Micarta (a multi-layered synthetic compound of linen and synthetic resins), Miyabi knives have perfect weight and balance.
