The Shun Ken Onion knives have Ken Onion's signature ergonomic handle design and unique blade sweep. They have blades made of 16 layers of steel on each side, with a VG-10 Super Steel (containing carbon, chromium, cobalt, magnesium, molybdenum, silicon and vanadium) core, which results in a 33-layer, rust-free Damascus-look blade. The handles are made of Pakka Wood which is an ebony black composite material made of fused hardwood and resin. It is durable, beautiful and allows for a secure grip.
Ken Onion Knives have an angled bolster which extends over the spine to create a smooth and rounded bolster instead of the rough spine seen on other blades. Each side of the bolster has an inner curve which forms a prefect thumb and index finger rest. In addition, the handle curves downward, to more closely match the shape of the handand to close the gap between the hand and handle created by other knives. The end result is a handle which allows people with small hands to feel they have control over a larger knife.
