The word tajine refers to both the contents and the container. Typically used in North African cuisine, a tagine is a dish made from glazed clay, which has a conical lid like a pointed hat, which allows steam to circulate inside. All recipes cooked in this type of dish are also called tagines.

Emile Henry Flame Top Tagines are ideal for making these North African stews. You can brown the meat and prepare the sauce on the stove top in the base of the tagine, then just add liquid and vegetables, place the conical top onto the base and steam the stew until it is in tender and flavorful.

Emile Henry Ceramic Flame Top products can be used directly on gas, electric or halogen cooking surfaces. They can be used safely in the microwave (since they do not contain any metal) and can be put in the freezer. Emile Henry Flame Top ceramic can withstand extreme changes in temperature so it can be taken from the freezer and put directly on your cooktop or into the oven. It is also dishwasher safe.
