This Mauviel M'Passion Tarte Tatin Pan has a stainless steel interior - so it will not react with the acidity of the apples used in a tarte tatin. A copper tatin pan is the perfect utensil for this dessert. The copper's excellent conductivity makes it easy to caramelize the sugar in which the apples are cooked - and the whole pan can go into the oven to bake the pastry.
